Vegetable Dum Biriyani |
Ingredients :
- 1/2 kg basmati rice – soaked in water for 30 mins
- 3 cauliflower florets
- 2 carrots
- 4 beans
- 2 Nookal
- 2 baby corn
- 3 medium sized onions
- 2 tomatoes
- 2 split green chillies
- 1 tsp turmeric powder
- 1-2 tsp red chilli powder
- 1 tsp garam masala
- 1 tsp coriander powder
- salt to taste
- 1/2 cup beaten curd
- 4 cloves
- 1 cinnamon stick
- 3-4 bay leaves
- 2 green cardamom
- 1 star anise
- 1/2 cup mint leaves
- 1 tbsp ginger-garlic paste
- kesari powder – a pinch
- 1 tsp butter
- 1 tbsp chopped coriander
Method :
- Heat oil in a pan and add butter, cloves, cinnamon stick, cardamom, bay leaves and star anise. Saute for a while. Add chopped onions and green chillies. Cook for 2 mins. Add ginger-garlic paste and mint leaves. Mix well and add tomatoes. Cook for 2-3 mins. Add all the vegetables and mix well.
- Add turmeric powder, red chilli powder, garam masala, coriander powder and beaten curd. Add 1/2 cup water and cook it covered for 10-15 mins. Add pinch of salt. Add water according to your measurement and let it boil. Add soaked rice, kesari powder and salt. Mix everything and cook it covered for 15 mins.
- Now keep a tava over the stove and let the pan sit over tava. Cook it covered for 5-10 mins. Garnish with chopped coriander. Keep it in dum and serve hot with any raita. You can also add potato, peas, soya chunks, bread pieces or mushroom to the biriyani.
