Vegetable Dum Biriyani

Ingredients :

  • 1/2 kg basmati rice – soaked in water for 30 mins
  • 3 cauliflower florets
  • 2 carrots
  • 4 beans
  • 2 Nookal
  • 2 baby corn
  • 3 medium sized onions
  • 2 tomatoes
  • 2 split green chillies
  • 1 tsp turmeric powder
  • 1-2 tsp red chilli powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • salt to taste
  • 1/2 cup beaten curd
  • 4 cloves
  • 1 cinnamon stick
  • 3-4 bay leaves
  • 2 green cardamom
  • 1 star anise
  • 1/2 cup mint leaves
  • 1 tbsp ginger-garlic paste
  • kesari powder – a pinch
  • 1 tsp butter
  • 1 tbsp chopped coriander

Method :

  • Heat oil in a pan and add butter, cloves, cinnamon stick, cardamom, bay leaves and star anise. Saute for a while. Add chopped onions and green chillies. Cook for 2 mins. Add ginger-garlic paste and mint leaves. Mix well and add tomatoes. Cook for 2-3 mins. Add all the vegetables and mix well.
  • Add turmeric powder, red chilli powder, garam masala, coriander powder and beaten curd. Add 1/2 cup water and cook it covered for 10-15 mins. Add pinch of salt. Add water according to your measurement and let it boil. Add soaked rice, kesari powder and salt. Mix everything and cook it covered for 15 mins.
  • Now keep a tava over the stove and let the pan sit over tava. Cook it covered for 5-10 mins. Garnish with chopped coriander. Keep it in dum and serve hot with any raita. You can also add potato, peas, soya chunks, bread pieces or mushroom to the biriyani.
