Vada combined with egg scrambles
- 4 left over medhu vada (urad dhal vada)
- 2 eggs
- 1 medium sized onion
- 2 green chilies
- 1/2 tsp turmeric powder
- 1/2 tsp coriander powder
- salt to taste
- 1 tsp mustard seeds
- Crumble the vada into small pieces. Heat oil in a kadhai and temper mustard seeds. Add chopped onions and saute a while. Add crumbled vada, turmeric powder and coriander powder.
- Mix all and fry for 2-5 mins. Break the eggs and mix with the vada masala. Add salt to taste. Cook for another 5 mins. Serve hot to get better taste. Otherwise it may later become too dry.
