Brinjal & Drumstick Sambar – without onion

Ingredients :

  • 1 or 2 drumsticks
  • 3 green brinjals
  • small lemon sized tamarind ball – soaked in water for 30 mins
  • salt to taste
  • 1 tsp mustard seeds
  • 1 curry leaves stick

For Ground Paste :

  • 4-5 dry red chilies
  • 1/2 tsp peppercorns
  • 1/2 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1/2 tsp fenugreek seeds
  • 1/ cup grated coconut

Method :

  • Prepare the ground paste adding little water. Heat oil in pressure cooker and temper mustard seeds. Add curry leaves and saute a while.
  • Add chopped brinjal and drumstick. Fry for 2 mins. Add ground paste, tamarind water and salt to taste. Add turmeric powder and close the lid. Add more water water if needed.
  • Pressure cook for 2-3 whistles and remove from the heat. Serve hot with steamed rice.
