A Well-known dessert of TamilNadu. Yes, there would not be a single person who doesn’t like this mouthwatery dessert. I never had chance to prepare, since it needs lot of patience which certainly i don’t have.
- 2 liters milk
- 1/2 cup sugar
- Heat milk in a heavy broad kadai or non-stick handi. Once it starts boiling, reduce the flame to simmer.
- Stir it often to avoid sticking and remove the cream (aadai) if formed. This process goes on for 1 hour. After an hour, the level of milk starts reducing and it starts changing its color too.
- Keep on stirring for every ten minutes. When the milk becomes thick, start adding sugar portion by portion and don’t stop stirring.
- When it starts leaving the base, add 1 tbsp ghee to it. Stir it frequently now and switch off the flame. Keep it the same vessel for sometime. Garnish with any nuts and serve and enjoy 🙂
