Vegetable Broth / Vegetable Stock is mainly used in soup, stew and rice recipes. Homemade are always better than store bought vegetable broth. It is flavorful and also easy to prepare. You can prepare it in advance and freeze as cubes and later use it.
- 3 carrots – peeled and chopped
- 1/4 cup chopped cabbage
- 1 medium sized onion – chopped
- 4-5 garlic flakes
- 1 tbsp chopped ginger
- 4 cloves
- 1/2 cinnamon stick
- 1 bay leaf
- 2 tbsp chopped coriander
- salt to taste
- 1 tsp pepper powder
- 10 cup water
- Heat 1 tsp oil in a handi or pan. Add all the above mentioned ingredients and allow to boil.
- Now cook it covered on low flame for 40-45 mins. Stir it occasionally. Remove from the heat and allow to cool. Strain the broth and use it for your making. Or else, store it in refrigerator for future use.
