| Karuvepillai Aatu Kari Thokku / Mutton & Curry Leaves Gravy |
Ingredients :
To Cook Mutton :
- 250 gms mutton
- 1/4 tbsp ginger-garlic paste
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 1 tbsp curd
- salt to taste
To Fry & Grind (Masala Paste) :
- 1 small onion
- 20-30 curry leaves
- 1 green chili
- 2 dry red chilies
- 1 tbsp coriander seeds
- 1 tsp fennel seeds
- 1 tsp mustard seeds
For Gravy :
- 1 medium sized onion
- 1 medium sized tomato
- 1/4 tbsp ginger-garlic paste
- 1/2 tsp red chili powder
- 1/2 tsp coriander powder
- 1 tsp pepper powder
- salt to taste
- 1/2 tsp mustard seeds
- 4-5 curry leaves
- 1 tbsp chopped coriander
Method :
- Pressure cook mutton with turmeric powder, ginger-garlic paste, red chili powder, curd and little salt. Add 1/2 cup water and close the lid. Cook for 30 whistles if the meat is tender, otherwise cook for 15 mins. Remove from the heat and allow to cool.
- Heat 1 tsp oil in a pan or kadhai and fry the above mentioned ingredients to prepare masala paste. Allow to cool and grind in a mixer adding little water to a smooth paste.
- Heat 3 tbsp oil in a pan or kadhai. Tamper mustard seeds. Add chopped onions and curry leaves. Fry for few mins.
- Add ginger-garlic paste and chopped tomatoes. Mash the pulp. Add grounded masala paste, red chili powder, coriander and cooked mutton along with stew.
- Add salt to taste and add water if needed. Cook it closed for 10 mins. Sprinkle pepper powder and cook for another 5-10 mins till the raw smell of masala goes off.
- Garnish with chopped coriander and remove from the heat. Serve hot with rice or roti.
