- 1 Pumpkin – small
- Select small pumpkin and cut into two halves with a knife. Scoop out the seeds and keep aside.
- Cut the pumpkin into 2-3 halves which reduces the time of cooking. Put those in a pressure cooker and add 2-3 cup water till the pumpkin halves are immersed.
- Close the lid and cook for 6-7 whistles. Remove from the heat and allow to cool.
- Peel the skin carefully and blend the pieces in a mixer until smooth. Store in an airtight container and keep it refrigerated. Use it in baking goodies like cookies, muffins, bread etc..
