Chicken Kothu Noodles

Chicken Kothu Noodles
Chicken Kothu Noodles

I'm not a fan of noodles but anything with chicken is always welcome. Once we had Chicken Kothu Idiyappam in Oru Sorru Restaurant and it was really good. I planned to reproduce the same recipe at home. But instead of idiyappam i tried it with Hakka Noodles. Vegetarians can try this recipe with paneer or any other vegetable of your choice.
I made it little spicier but you can adjust the taste according to your need. It goes well with chicken or mutton curry.

Ingredients :

  • 1/2 packet of Hakka Noodles
  • 1 large onion - finely chopped
  • 1 medium sized tomato - finely chopped
  • 2 green chilies - chopped
  • 1 tbsp ginger-garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • salt to taste
  • 1 tsp mustard seeds
  • 1 tbsp lemon juice
  • 10 curry leaves
  • 1 tbsp chopped coriander

To Marinate Chicken :
  • 250 gms Chicken - B/L
  • 1/4 tsp turmeric powder
  • 2 tsp black pepper powder
  • salt to taste

Chicken Kothu Noodles

Method :
  • Cut chicken into pieces and marinate with turmeric powder, pepper and salt. Keep it aside for 15 mins. Heat 2-3 tbsp oil in a pan or kadhai.
  • Fry chicken pieces till it turns golden brown and remove from the heat. Allow to cool and scramble the chicken pieces. Keep it aside.
  • Boil enough water to cook noodles in a pan. Add little salt and 1/2 tsp salt. Cook for 8-10 mins and remove from the heat. Drain the water completely.
  • Spread noodles on a plate and allow to cool. Cut the noodles into small small pieces. I used dosa ladle to scramble noodles. Keep it aside.
  • Heat 1 tbsp oil in a pan or kadhai. Tamper mustard seeds and curry leaves. Add chopped onions & green chilies. Fry for a minute.
  • Add chopped tomatoes and saute a while. Add ginger-garlic paste and cook for few seconds.
  • Add scrambled chicken, turmeric powder, red chili powder and coriander powder. Mix everything well and add salt to taste. Cook on low flame for 2 minutes.
  • Add scrambled noodles and stir well. Cook for 2-5 mins and garnish with chopped coriander. Serve hot with sauce or any non-veg gravy.
