Kofta is a fried ball made with minced meat. Kofta are either taken as snack or they can be used to prepare curry or pulao/biriyani. I have already posted Fish Kofta Curry and the vegetarians can try kofta with minced vegetables or paneer. In south, we call minced meat ball as kola urundai which is very famous among south indians.
You can either use maida or besan flour to make kofta. I have also used rice flour to give crispy texture but it is optional. Today we will see how to prepare kofta biriyani using paneer, potato and plantain kofta.

Ingredients :

For Kofta :
  • 2 medium potatoes - boiled & mashed
  • 1 plantain (raw banana / vazhakkai) - boiled & mashed
  • 1/2 cup scrambled paneer (cottage cheese)
  • 2-3 tbsp maida (all purpose flour)
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • salt to taste
  • 1 tbsp rice flour

For Biriyani :
  • 2 cup Basmati rice - soaked in water for 30 mins
  • 2 onions- finely chopped
  • 2 tomatoes - finely chopped
  • 2 green chilies - slit at the end
  • 1/2 cup mint leaves
  • 1 tbsp ginger-garlic paste
  • 1/4 cup curd / yogurt
  • 1/2 tsp red chili powder
  • 1 tsp chicken powder or garam masala
  • salt to taste
  • 4 cloves
  • 1/2 cinnamon stick
  • 1 mace
  • 1 tsp nutmeg powder
  • 1 bay leaf
  • 1 star anise
  • 1 tsp black cumin seeds (shahi-jeera)
  • 4 tbsp oil

To Garnish :
  • 1/4 cup mint leaves
  • 1/4 cup chopped coriander leaves
  • 1/4 cup milk
  • 4 saffron strands or edible orange color

Method :

To Prepare Kofta :
  • Combine mashed potato & raw banana in a mixing bowl. Add scrambled paneer, turmeric powder, red chili powder, coriander powder and salt to taste.
  • Mix everything. Add rice flour and maida flour. Combine everything and keep aside for 10 mins.
  • Heat oil for deep frying in a pan or kadai. Make small balls of the dough prepared and deep fry in oil till it turns golden brown. Remove from the heat and drain the excess oil using tissue paper. Keep the kofta aside. 
  • Warm the milk and add saffron strands to it. Keep it aside. Since i didn't had saffron, i have used orange color.



To Prepare Biriyani :
  • Heat 6 cup water in a vessel and once it starts boiling, add rice to it. Add little salt and 1 tsp lemon juice. Cook on medium flame till rice is 3/4 th cooked.
  • Drain the water completely and spread rice on a plate. Heat 4 tbsp oil in a handi or pan. Add cloves, cinnamon, mace, nutmeg powder, bay leaf and black cumin seeds. Saute a while.
  • Add chopped onions, green chilies and fry for few mins on low flame. Add mint leaves and saute a while. Add chopped tomatoes and ginger-garlic paste. Cook for 2 mins.
  • Add curd, turmeric powder, red chili powder and chicken powder or garam masala. Mix well everything. Cook it covered on low flame for 5 mins. Transfer the masala to a bowl.

  • Take the handi and sprinkle little masala. Spread a layer of rice over masala. Pour in half of the saffron milk and also sprinkle mint & coriander leaves. Keep 2-3 kofta over the garnish.

 
  • Spread another layer of rice and sprinkle the prepared masala. Spread garnishing ingredients and kofta. 
  • Close it with a lid and keep on a iron tava and cook on low flame for 10 mins. Mix the biriyani with a slotted spoon and serve hot with raita and any veg/non-veg gravy.
