Like Chettinad Cuisine is famous all over the world, similarly Udupi Cuisine is a world renowned cuisine. Udupi Cuisine comes under Karnataka Region. They strictly follow Saatvik tradition like no onion and no garlic and no meat/fish.
But I depend on both the things :)
I never had udipi sambar before so was eager to try this saatvik food when saw in Hindu Newspaper. The article on Udupi Sambar was published in Hindu so i noted down and tried at home. We all loved this sambar and had with my fav Potato Fry & Keerai Vadai.

Ingredients :

For Sambar :
  • 1 cup toor dal (tuvaram paruppu / split pigeon peas)
  • 3-4 small brinjals - chopped
  • 1 drumstick - chopped
  • lemon sized tamarind ball soaked in 1/2 cup water
  • 2 green chilies - slit at the end
  • 1/4 tsp turmeric powder
  • asofoetida - a pinch
  • salt to taste
  • 1 tsp mustard seeds
  • 1 tsp urad dal (black gram)
  • 2 tsp jaggery
To Fry & Grind :
  • 1/4 cup chopped coconut
  • 1/2 tsp fenugreek seeds
  • 1 tsp urad dal (black gram)
  • 6-7 dry red chilies
  • 2 tsp coriander seeds
  • 10 curry leaves

Method :
  • Pressure cook toor dal with 2 cup water for 3-4 whistles. Remove from the heat and allow to cool. Once pressure settles, remove the lid and mash the dal. Keep it aside.
  • Heat 1 tbsp oil in a pan or kadhai. Tamper fenugreek seeds, urad dal and coriander seeds. Add curry leaves and broken chilies. Saute a while.
  • Add coconut and fry for a minute. Remove from the heat and allow to cool. Grind in a mixer adding little water to smooth paste. Keep it aside.
  • Heat 2 tbsp oil in pan or kadhai and tamper mustard seeds. Add urad dal and saute a while.
  • Add chopped vegetables and fry for a min. Add 1 cup water and cook it covered on medium flame for 5 mins.
  • Add tamarind squeezed water, turmeric powder and mix well. Add little salt and cook for a minute. Add mashed dal, jaggery and salt. Cook it covered for 2 mins.
  • Add grounded paste and 1-2 cup water. Cook it covered on low flame for 10-15 mins. Serve hot with rice or idli/dosa.

  1. I have never made such a sambar, the udupi which is really very inviting. Wish I have seen this recipe earlier because I don't have coconut. Nevermine, there's always next weekend end, also hoping I can find drumsticks to be added inside. Much loved as its a beauty.
