The word “Achari” makes my mouth watery. Raw Banana is fried and cooked with pickling spices. I dont have words to describe its heavenly taste. I made it yesterday and enjoyed with white bread. You can also use paneer, cauliflower or potatoes to prepare this masala. For a change i tried it with raw banana and the combination of all the spices blended well with this veggie. Lets check the recipe,

Ingredients :

To Dry Roast & Grind :

  • 1 tsp fennel seeds (saunf)
  • 1 tsp mustard seeds
  • 1/4 tsp fenugreek seeds
  • 1/4 tsp kalonji (onion seeds)
  • 1 tsp cumin seeds
  • 4 dry red chilies

For Masala :

  • 1 Raw Banana (vazhakkai) – boiled and diced into cubes
  • 1 Potato – boiled and diced into cubes
  • 1/4 cup finely chopped onion
  • 1 tbsp ginger-garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp lemon juice
  • asofoetida – a pinch
  • salt to taste
  • 1 tsp mustard seeds
  • 2-3 tbsp mustard oil
  • 5-6 curry leaves

Method :

  • Dry roast all the ingredients mentioned under (To Roast and Grind) for few seconds and allow to cool. Grind in a mixer to coarse powder. Transfer it to a bowl and mix lemon juice. Keep it aside.
  • Heat oil in a pan or kadhai. Fry raw banana and potato cubes till it turns golden brown. Remove the cubes and keep aside.
  • Tamper mustard seeds and curry leaves in the same oil. Add chopped onions and saute a while.
  • Add ginger-garlic paste, turmeric powder, red chili powder and asofeotida. Stir well.
  • Add fried cubes, ground powder and salt to taste. Add 1/2 cup water and cook it covered on low flame for 10 mins till till it becomes dry. Serve hot with rice or roti.
