Karela, Capsicum & Egg Bhurji / Bitter Gourd Bhurji

Pavakkai Muttai Podimas / Karela Bhurji, unique combination of bitter melon, bell pepper and egg in a dry curry which goes very well with roti / chapati. Bitter Gourd is one super healthy vegetable which contains vitamins, magnesium, calcium, potassium and also has dietary fiber. Though it is bitter in taste as the name suggests, they possess many nutritional benefits. They are low in calories and a must try vegetable for diabetics. 

To remove the bitterness, you can follow few tips. Remove the seeds of karela and wash them. Mix little salt and lemon juice & keep aside for 20-30 mins. Similarly, you can soak the bitter gourd in tamarind water for 20 mins. But, I follow these tips rarely as I like its bitter taste and enjoys more when prepared with potato 🙂 When its about making stuffed karela, I sure follow the above mentioned tips. In this recipe, I have combined karela, capsicum and eggs to prepare dry curry. Each of the ingredient leaves an unique flavor to the dish & garam masala does the magic of blending all the flavors together. You can either use regular bitter melon or the smaller ones which are less bitter in taste.

Ingredients:

  • 70 gms karela / bitter gourd / pavakkai
  • 2 eggs
  • ½ green bell pepper / capsicum
  • 1 medium sized onion
  • 1 small tomato
  • ¼ tsp turmeric powder
  • 2 tsp black pepper powder
  • 1 tsp garam masala
  • Salt to taste
  • 1 tsp fennel seeds / saunf
  • 1 tbsp lemon juice

Method:

  • Peel and wash bitter gourd. Cut into two halves and remove the seeds. Wash well and mix with ½ tsp salt and 1 tsp lemon juice. Keep it aside for 20 mins. Wash it again. Heat 2 tsp oil in a pan or kadai. Add fennel seeds and chopped onions. Cook for a minute on low-medium flame. Now, Add chopped tomatoes and stir well.

  • Add chopped capsicum, bitter gourd and stir well. Now, Add turmeric powder and 1 tsp pepper. Cook it covered on low flame for 5 mins. Add broken eggs, garam masala, 1 tsp pepper and salt to taste. Stir well and crumble the mixture. Cook it covered for another 5 mins. Sprinkle lemon juice at the time of serving.
