Sweet Corn & Pomegranate Popsicle, today I’m sharing another sweet corn recipe which I had developed for Complete Wellbeing Magazine. I will also share the other sweet corn recipes soon. This is an easy and healthy popsicle recipe which contains only 4 ingredients (sweet corn, pomegranate, yogurt and honey). For vegan version, replace yogurt with non dairy yogurt.
To make healthy popsicle, always use fruits or vegetables as much as possible and replace sugar with honey. We do not include sweet corn more often in our diet. I had only once shared the recipe of Paneer & Sweet Corn Curry with Betel Leaves Thepla. I don’t know why I never had liking for sweet corn when compared to baby corn. You can find many baby corn recipes in my blog compared to sweet corn. This is a very simple recipe. I have blended sweet corn and all other ingredients in a mixer grinder. Then you can either strain the juice or use it as it is to fill the popsicle mold. If we use the juice with the husk, you will get more nutritional benefit out of it.
- 120 gms Sweet Corn
- 75 gms Pomegranate Seeds
- 2 tbsp honey
- 1 cup yogurt
- Pressure cook sweet corn with enough water for 2 whistles. Remove from the heat and allow to cool. Drain the water completely. Blend sweet corn in a mixer to smooth paste.
- Now blend this paste along with pomegranate seeds, honey and yogurt. You can either filter the mixture or use it as it is. Fill this in Popsicle molds and keep in freezer for 6-8 hours or overnight. Now, keep this mold under running tap water for few mins and remove popsicle carefully.
