Payasam Recipes, Kheer Varieties, I have a compiled a list of 17 payasam recipes shared in my blog over a period of time. Payasam / Kheer is a must dish let it be any festival occasion like ganesh chaturthi, diwali, pongal, saraswathi pooja, etc.. This is a famous indian dessert known by the name “Payasam” in south India and “Kheer” in northern states. Phirni is a thick kheer variety mostly famous in northern parts of India.
Payasam is prepared using milk or coconut milk and sweetened with condensed milk / sugar / jaggery. When using jaggery, make sure to add it after removing payasam from the heat, since it will curdle milk.
For additional flavors, we add dry fruits, fruit puree, etc.. I have prepared payasam using pulses like bengal gram, split green gram and also tried with cauliflower. You will find many unique and interesting combination of flavors. To make payasam more healthy, try replacing rice with millets / black rice / red rice.
