Besan Butterscotch Barfi / Kadalai Maavu Burfi, a very yummy and delicious barfi recipe made with the combination of besan (gram flour), mawa (milk solids), ghee, butterscotch chips and milkmaid. If you are looking for besan based sweet recipes, then do not forget to check my post.
Besan / Kadalai Maavu is roasted and cooked together with mawa and butterscotch to perfection. For better results, always use fresh gram flour and homemade mawa/ khoya. If you do not have butterscotch chips, then you skip this ingredient and try adding chopped dates.
Always roast besan with little ghee to remove raw smell. It takes about 5 minutes to roast besan. Cook it with mawa, butterscotch and milkmaid till the correct consistency is achieved. This barfi takes 20-25 minutes to prepare and yields 16-18 barfi / fudge. It is chewy (because of milkmaid) and loaded with the aroma of ghee / clarified butter. You can replace ghee with light flavored oil.

- ¾ cup besan / gram flour
- ½ cup mawa / khoya
- ½ cup butterscotch chips
- 2 tbsp milkmaid
- 6-7 tbsp ghee / clarified butter

How to prepare Besan Butterscotch Barfi
- Take a tray and grease with little ghee. Heat a pan or kadai on low flame. Add 2 tbsp ghee and roast besan till nice aroma comes. It may take 5 minutes to roast. Make sure to not burn the flour so keep on low flame and roast besan. Now, add crumbled mawa and stir well.
- Mix everything well. Add butterscotch and cook for 2 minutes on low flame. Add milkmaid and mix everything well. Now, add 1 tbsp ghee at a time and cook till ghee separates from the mixture and starts leaving the sides of the pan. Pour this mixture over greased tray and level it properly. Make rectangular or square cuts on barfi when it is still hot. Let it come to room temperature and remove those pieces. Store in an airtight container.
